Ingredients salad (for about 4 people):

  • 250 g dandelion (young, before flowering).
  • Wild herbs of your choice and liking
  • Walnut oil (alternatively sour cream)
  • Apple cider vinegar
  • Salt, pepper, pinch of sugar (alternatively honey or agave syrup)

Optional toppings:

  • Pine, pumpkin or sunflower seeds
  • Fresh vegetables (radishes, zucchini, carrots, tomatoes, etc.)
  • Boiled eggs
  • Fried bacon
  • Sweated onions

Preparation:

  • Select dandelion leaves and wild herbs (possibly picked by yourself) and clean them damp with wet kitchen towel. Do not rinse directly with water or the leaves will wilt quickly. Place leaves in a bowl.
  • Optional: cut bacon into strips and dice onion. Put both together in a pan and fry.
  • For the dressing, mix salt, pepper, oil (or sour cream), vinegar, and sweetener of choice in a container. Once the salt and sweetener have completely dissolved, the dressing can be poured over the salad.
  • The salad can be topped with dandelion flowers, fresh vegetables, bacon, onion, or boiled eggs.

It goes well with fresh baguette.
