
Healthy energy balls with dates
Ingredients:
- 10-12 dates
- 1-2 tablespoons dried cranberries
- 75 g cashews
- 1 pinch of salt
- 1-2 teaspoons water
- Optionally 1 teaspoon flax or chia seeds
- Optional approx. 2 tablespoons smooth peanut butter
Preparation:
- Blend dates, cashews, cranberries and salt in a stand mixer until smooth.
- If the mixture is too dry, add a little water and continue to blend.
- If the mixture is too liquid, mix in more rolled oats or grated nuts.
- If desired, add additional chia or flax seeds and peanut butter and mix.
- Form round balls from the mixture and place on a plate.
- It is best to store the balls in a closed container in the refrigerator, where they will be good for about a week.
